String Bean Salad

This is such a quick and easy dish. You can make it with very little notice which is great if you’re doing things last minute. If you are making it as part of a large meal it is perfect because you can make it in advance, it won’t take up an extra burner while all of the last minute dishes are heating and it can be served chilled or at room temperature.


  • 1 lb of string beans, washed and ends trimmed
  • 2-3 cloves of garlic, peeled and cut in half
  • Olive oil
  • Salt and pepper to taste


  1. Bring a large sauce pot of salted water to a boil
  2. Once the water begins boiling add the string beans and stir occasionally
  3. Meanwhile, fill a bowl with ice and cold water and keep it close by
  4. After the string beans have been boiling for 3-5 minutes, drain them into a colander over the sink and then place the string beans into the ice water to shock them (this will preserve the color and stop the cooking process)
  5. Once the string beans have cooled a bit, strain them in the colander again and then place them in a serving bowl, add the garlic
  6. Dress them with olive oil, salt and pepper to taste
  7. Toss the string beans (tongs work great for this) and serve chilled or at room temperature
